This week we’re chatting with the lovely Claudia Monkhouse, the face behind Instagram account The Plantiful Life.

Claudia runs the Instagram account The Plantiful Life based in New Zealand. She started her account with the intent to share the vegan message and promote vegan food. With the belief that anything can be ‘veganised’ this passion for plant-based eating has led to her own social media journey. She loves to share a range of goodies; cakes, raw cheesecake to cookies. She hopes to inspire many and most importantly share her love for plant-based food.

Your go-to brekkie is…

Hmm, my go to brekkie would have to be porridge or overnight oats. I love that you can have variations of porridge i.e carrot cake porridge, red velvet… the options are endless!

Your go-to lunch is…

It would definitely have to be rice paper rolls! I have them no matter the weather, and they’ve quickly become a favourite in my household. I love to fill mine with avocado, marinated tofu, red capcisum (bell pepper), cucumber, greens and much more!

Your go-to dinner is…

The classic Buddha bowl. I have no idea where my obsession started, but, I eat them almost every night. They’re so easy to prepare and are so wholesome. I try to incorporate all the essential nutrients; fats, carbohydrates, protein etc…

Dessert or no dessert…

Dessert, dessert, dessert!!! I cannot skip dessert it helps to satisfy my sweet tooth cravings. Plus, life is all about balance right? My fave desserts are raw slices.

What you reach for when a snack attack hits…

I rarely snack! But when I do I have some tofu dipped in hummus. Is that weird? It probably is, but I love my tofu! And hummus!

Your fave foodie destination…

My all time favourite cafe in New Zealand is The Unbakery. However, if we’re talking worldwide Bali has the best vegan food and so many options.

Three foods you can’t live without…

Avocado, Kumara and …. OATS!

Your ultimate foodie indulgence…

My ultimate foodie indulgence would just about be anything sweet. It’s a hard question! I have a difficult time making up my mind, so one time I had Vegan Vanilla Ice cream with brownie, loving earth chocolate, peanut butter and cookies on top. That was amazing!

The Vietnamese Crepe from the Little Bird cookbook – savoury goodness!!
