An award-winning journalist, Carolyn has also written a book (The Medallion of Auratus) and loves travelling, photography, long walks, being in nature, yoga, swimming, running and riding as a passenger on her man’s motorcycle.

Either Chantal Organics raw oats bircher museli with fresh fruit and oat milk, or scrambled eggs on organic sourdough served with sauerkraut and avocado.

Your go-to dinner is…

Usually a vegetable stirfry with mushrooms and goat or sheep feta. Am also loving Edamame & Mung Bean Fettucine or Ceres Organics Quinoa Spaghetti mixed with broccoli, mushrooms, garlic and pesto. And homemade nachos with Mexican chilli beans, broccoli, tomatoes, garlic, onion, fresh chilli and mushrooms topped with smashed avocado and grated cheese!

Vege NachosDessert or no dessert…

I’m not much of a dessert person but a treat I do love is Wahiki’s Vanilla Coconut Ice Cream served with a spoonful of borage honey. Delicious!

What you reach for when a snack attack hits…

Ceres Organics Tamari Roasted Almonds, Garden of Eatin’ Sesame Blues Organic Corn Chips with Lisa’s Hummus capsicum dip, a fairtrade banana or Pure Delish’s Haffagani Bites which contain chilli/cacao… Sooooo delicious.

Your fave foodie destination…

Ortolana in Britomart, Auckland which dishes up beautiful fresh local food with stunning flavours. Also can’t go past the mandarin Jaffa ice cream at Ben Bailey’s restaurant The Grounds, Henderson. In Wellington (my hometown), one of my go-to places is Nikau Café. You can’t beat their kedgeree or cheese scones.

Three foods you can’t live without…

Scrambled eggs, cheese and feijoas but not in that combination!

Your ultimate foodie indulgence…

Nikau Café cheese scone straight out of the oven.

The recipe that’ll always get you drooling is…

La Boca Loca (Wellington) Frijoles de la Olla – black beans topped with organic feta.
