We’re obsessed with hearing about what other people eat all day every day and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

Brittany lives in Auckland with her husband Jamie and Maxwell the Border Collie. She has a passion for living a healthy lifestyle which is sparked by her love of sports, the outdoors, and of course food. Brittany lives with coeliac disease so spends a chunk of her time creating and baking gluten-free food and trying every new gluten-free product that hit the shelves. 

Your go-to brekkie is…

Rice flakes because they’re the perfect gluten-free alternative to oats. The toppings, however, depending on how I’m feeling. My sweet tooth enjoys fruit and cinnamon (a sprinkle of brown sugar does the trick too), or some Pic’s peanut butter and a dash of honey. 

Your go-to lunch is…

For the workweek, I meet my husband at the viaduct and eat a big roast veggie salad by the water. You can add all sorts of seasonable vegetables – it never gets old, tasty, affordable and a great way to tick your 5 plus a day quota.  

Your go-to dinner is…

We love wraps at our house. Our go-to fillings are frying beans (cannellini, lima, pinto and kidney beans) with fajita seasoning or BBQ jackfruit. Although a lot of our meals are quick and easy, they are never short of flavour. Plus it’s a bonus that they are affordable! 

Dessert or no dessert…

100% a dessert girl, however, it’s not an everyday thing because otherwise, I wouldn’t know how to stop – my sweet tooth lacks control. My favourite desserts are the vegan trumpets (I’m addicted), homemade Anzac cookies (using my key ingredient, the trusty rice flakes) or raspberry raw slice (hubby’s favourite). The Clean Mixes choc raspberry mix serves as an awesome base.

What you reach for when a snack attack hits…

I love to snack! After work I always grab brown rice cakes with peanut butter, banana and honey – trust me when I say this combo is life-changing. 

If it’s a workout day I enjoy a cold thick creamy choc-banana protein shake. 

Your fave foodie destination…


The best food I have ever had is from our cruise around the Caribbean. Not only were there spreads of gluten-free food fit for coeliacs, but they also gave me a basket of the softest and tastiest gluten-free bread for dinner every night. It was so good that we have booked another cruise around Europe and I can’t tell if I am more excited about the food or the travel itself. 

Three foods you can’t live without…

The three C’s – chocolate, cheese and crackers. These foods are the stars of our game nights, movie nights, girl nights, or just an excuse to whip out a cheeseboard. 

Your ultimate foodie indulgence…

There is something about a crisp, fresh seasonal vegetable salad with some fried halloumi while sitting outside on a summer day. No technology around us, just fresh air, good food and great company.  

The recipe that’ll always get you drooling is…

Lemon and coconut slice from @justamumnz. A delicious soft slice with a good tang of lemon!
