We’re obsessed with hearing about what other people eat all day everyday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat with the lovely Ashley Scott, face behind the Instagram page @what_ash_ate 

Ash develops recipes, she then takes photos of said recipes and then spends that money on wine and renovating her house.


Your go-to brekkie is…

I usually start my day with a cup of earl grey tea with almond milk, breakfast for me is usually around 11am, I’m just not hungry until later in the day. Lately I’ve been really enjoying chicken broth with black bean noodles and kim chi. My second choice would be sourdough with avocado and za’atar.

Your go-to lunch is…

Typically, I eat left overs for lunch but if there isn’t anything in the house ill make a big green (undrinkable to most) smoothie. My base recipe is a frozen banana, kale, coriander, mint, ginger, turmeric, parsley, maca, coconut oil, spirulina, coconut water…..other add ins include peanut butter, cashew butter, pineapple….just depends on what I feel like.

I only drink smoothies in the warmer months, during winter I switch to miso with wakame and brown rice or a sourdough toastie with tomato soup.

Your go-to dinner is…

Oh again, hard question! I eat quite simple food, I like to use a handful of ingredients, and showcase them rather than slaving away for hours.

Honestly I just love salad, I made a really yummy spread of salads last week…

Salad 1: Crushed organic pea (from frozen but fresh is better), with finely chopped parsley, coriander and mint, squeeze of lemon juice and a generous dousing of olive oil…

Salad 2: Heirloom tomatoes from the farmers market with local shredded mozzarella and home made basil pesto.

I always add a protein, usually smoked salmon or a few boiled eggs.


Dessert or no dessert…

I don’t really have sweet tooth to be honest, I crave quite rich foods throughout the day and I don’t pay attention to my healthy fat consumption throughout the day which I think curbs any sweet cravings.

What you reach for when a snack attack hits…

I could eat cheese and crackers all day. I love the Bonnie Goods Smoked Paprika Oat cakes with homemade hummus, sharp cheddar and pickles or gherkins.

Your fave foodie destination…

Impossible to answer. Actually there are too many! I would love to go back to Morocco, I traveled through with friends when I was 18, Its where I tasted for the first time and fell in love with preserved lemon. I drunk sweet peppermint tea and ate French pastries every morning. The tender clay baked targines, the sweets….I loved everything about Moroccan cuisine.

I’ve never been to Turkey but it’s a foodies dream, actually the whole middle east really inspires me food wise. I love the ceremony around food throughout that part of the world, so much variation and history. Middle Eastern spices feature daily in my cooking, cumin, turmeric, sumac to name a few. I love pomegranate molasses with meat or in salad dressings, and don’t get me started on baklava! Honestly If I ever get to the Middle East, I’ll never leave.

Three foods you can’t live without…

Tea, sourdough, butter.
