We’re obsessed with hearing about what other people eat all day everyday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

Angela Redfern is a 47 year old, mother of two to Sam (6) and Jessica (5) and a business owner living in the beautiful Hibiscus Coast in Red beach . She established the iconic Ripe deli on Richmond Rd Grey Lynn nearly 18 years ago and has since gone on to open two more stores. Angela is the publisher of the top selling Ripe Recipe Cookbooks, which are wonderful collections of recipes from many of the chefs at Ripe deli.

She is passionate about creating a happy, safe and kind workplace and loves the world of hospitality.

Your go to brekkie is…

Without a doubt eggs – my favourite is scrambled with avocado and greens . I have the last week really been enjoying having soup for breakfast though- nourishing and satisfying.

Your go to lunch is…

I’m very lucky that lunch is an easy decision for me as often at work and get to choose from our wonderful array of fresh salads which are always changing so you never get bored. Love the Caesar they make at the moment with shaved Brussel sprouts, so good ! If at home tinned Cannelini beans warmed through melted butter and fresh sage is a winner.

Your go to dinner is…

I can’t move past a Roast – with creamed Cauliflower. Growing up in the UK a roast is a main player and I can throw one together blindfolded. Curries would be my other preferred choice.

Dessert or no dessert…?

Dessert I tend to not make them any more but it can be difficult to resist not taking one home from work – the Lemon meringue pies are particularly good . A small piece of dark chocolate at night with a cuppa tends to be suffice usually though.

What you reach for when a snack attack hits…

For snacks I am trying to eat more fruit as don’t tend to so much these days – I have to watch myself to as easy to snack all day at work trying new things or just checking flavour. Handful of nuts is nice and ties me over.

Your fav foodie destination…?

My favourite food destination is markets on the weekend and enjoying my neighbours at The Goodside – Smales farm . The likes of The Grange, Fantail & Turtle, Soho, &Sushi and Goodness Gracious – more than enough choice to keep me happy !

Three foods you can’t live without…?

I can’t live with Salmon, Rice and Chocolate !

Your ultimate food indulgence…?

I can’t pass a good Banoffee Pie – now I’m going to be craving one.

The recipe that always gets you drooling is…?

Massaman curries made with Amy’s home made paste in one of the Ripe cookbooks.
