This week we catch up with Amelia Watson, the lovely face behind one of our absolute fave inspiring foodie grams, Kitchen of Amelia.

Amelia WatsonAmelia is a 22-year-old full time foodie and lawyer. She is passionate about creating and photographing healthy, vibrant food that is flexible for busy lifestyles. When she isn’t at work, she is busy cooking up a storm in her kitchen at home and creating food that is both beautiful and delicious.

Your go-to brekkie is…

Porridge! I normally eat breakfast at work so I like to take my porridge with me in a jar. I always incorporate vegetables into it, and my favourite combo is easily Cacao Peanut Butter Zoats.

Your go-to lunch is…

Lots of vegetables! When prepping my lunches for the week I always start with vegetables then add protein and healthy fats from there. One of my favourite combos at the moment is spiralised sweet potato, corn, paprika and halloumi.

Halloumi SaladYour go-to dinner is…

Follows a similar recipe to lunch, although I often opt for something lighter at the end of the day. I love simple Asian flavours, salmon or tempeh with soba noodles and lots of greens is a classic combination that is always delicious.

DinnerDessert or no dessert…

Always dessert. What kind of question is that?! I always have homemade healthy sweet treats on hand. Some of my favourites are black bean brownie or oatmeal chocolate chip cookies. Failing that, a square of Pana Chocolate (or two).

What you reach for when a snack attack hits…

I’m not much of a snacker… But a spoonful of peanut butter always does the trick!

Your fave foodie destination…

Melbourne. Whether it’s fine dining or cafes, there is so much to choose from.

Three foods you can’t live without…

Peanut butter, carrots and berries.

Your ultimate foodie indulgence…

It’s really hard to pick one answer for this question… But probably a decadent dessert from Milse in Auckland. Or a slice of Little Bird brownie.

The recipe that’ll always get you drooling is…

Anything with peanut butter really. The obsession is real.
